Joanna is an instructor at KCA and an ever-evolving student of bread. She spends her time learning new techniques to perfect the art of bread-making. During this class, you will not only learn how to make a holiday brioche, but you will be able to take it home and feast on your creation!
- Brioche Bread: Explanation of basic mixing principles and how to find a gluten window in a straight dough with instant yeast, how and when to add in fruits, raisins, or nuts.
- Demonstration on three ways to shape brioche dough into attractive holiday table breads:
- basic loaf pan shape
- brioche fruit braid wreath
- dinner rolls (single or placed together into fun holiday designs: candy cane, Christmas tree, or wreath)
Each station will get to mix a batch of the brioche dough, and each attendee may select a shape from the demonstration to create, proof, bake and take home.
