Joanna is an instructor at KCA and an ever-evolving student of bread. She spends her time learning new techniques to perfect the art of bread-making. During this class, you will not only learn how to make a holiday brioche, but you will be able to take it home and feast on your creation!

  1. Brioche Bread: Explanation of basic mixing principles and how to find a gluten window in a straight dough with instant yeast, how and when to add in fruits, raisins, or nuts.
  2. Demonstration on three ways to shape brioche dough into attractive holiday table breads:
  3. basic loaf pan shape
  4. brioche fruit braid wreath
  5. dinner rolls (single or placed together into fun holiday designs: candy cane, Christmas tree, or wreath)

Each station will get to mix a batch of the brioche dough, and each attendee may select a shape from the demonstration to create, proof, bake and take home.

Age 7+

Spots are limited so be sure to register now!

Ticket price is per person.  Registration for this class will close 48 hours prior to this event.

Kearney Culinary Academy adheres to a strict minimum class capacity rule. Classes with less than 8 participants will be cancelled or rescheduled for a later date. Participants will be notified at least 48 hours in advance and offered a refund or credit for an alternative class.
